How to Store Tomatoes: Ripening, Temperature & Long-Term Preservation

A single tomato plant produces 60–100 tomatoes over 3–4 months. Strategic storage and preservation extends your tomato supply 6–12 months after harvest. This guide covers ripening, storage conditions, and preservation methods.

Short-Term Storage (2–4 Weeks)

Ideal Conditions

Placement Paper bags (single layer) in cool cupboard

Ripening Green Tomatoes

At frost threat (Oct–Nov in North Asia): Pick all remaining fruit (green or partially ripe).

Ripening process:

  1. Place in paper bag with one ripe banana or apple (ethylene gas accelerates ripening)
  2. Store at 15–20°C, 85–90% humidity
  3. Check daily
  4. Ripe in 5–10 days; move to cool storage

Result: 70–80% of green tomatoes ripen to red. Perfect solution for end-of-season glut.

Long-Term Preservation (6–12 Months)

1. Canning (Boiling Water Bath)

Yield: 1 kg fresh = 0.7 kg canned Cost: 500–800 PKR per kg (jars, sugar, salt, fuel) Shelf life: 12–24 months Preparation:

  • Blanch tomatoes 1–2 minutes; peel
  • Cut into chunks; pack into sterilized jars

2. Freezing

4. Tomato Sauce/Paste

  • Simmer tomatoes 30–40 minutes until soft
  • Strain through fine mesh (remove skins)
  • Reduce to paste consistency (2–3 hours simmering)
